Getting more out of my Harvest2U shipment: Swiss Chard Quiche

One of my favorite things about being a part of Harvest2U is that I don't get to pick my produce. It's like getting a present every Wednesday. I decided when I joined this co-op that I could view it two ways. One being that some of the items were things I would have never purchased on my own and wonder what on earth I would do with them. Thankfully I chose the other option. The option that let me to challenge myself to create new recipes with new ingredients. I'm loving it and so is my family. I'm having more fun cooking than I've had in a long time!




On the menu last night was swiss chard. I will admit that I had never purchased swiss chard in my life before Wednesday. So, I went to work to try and figure out how I would use it. I found that it was similar to spinach and when I figured that out, it was off to the races.


Swiss Chard Quiche (Crustless version to adapt to our South Beach Diet living)

1 tsp olive oil
1/2 onion, diced
1/2 red bell pepper, diced
1/2c sliced mushrooms
1-2 cloves garlic, minced
1/2 lb swiss chard, stems trimmed but not removed
1c shredded gruyere
1c shredded cheddar
1c egg substitute
1c skim milk

Preheat your oven to 350 degrees



In a skillet heat oil and saute onion, bell pepper, mushrooms and garlic.

While these guys are cooking away, wisk the egg substitute and milk together in a large bowl then fold in the cheeses.



When onion becomes translucent, add swiss chard and saute until slightly wilted. Season with salt and pepper.

Once swiss chard is wilted remove from heat. Fold the vegetable mixture into the egg mixture and pour into a pie pan that has been coated with non-stick spray.



Bake for 35-40 minutes. Remove from oven and let stand a few minutes before serving.


The result is a beautiful pie shaped perfection! This meal has so many possibilities. It works for breakfast, brunch or dinner. Meat lovers can add bacon or prosciutto for a heartier version or if you prefer a crust you can easily add one. Serve it with soup or a salad at dinner and home fries or hash browns for breakfast (that is assuming you aren't on the South Beach Diet plan, too). You could even make it ahead so you have a hot breakfast every morning that just needs to be popped into the microwave for 45 seconds.

Harvest 2U

This week I finally joined a local co-op called Harvest2U. They are a cooperative of local farmers that grow organic produce and provide it to our community. Best of all, they give back. They give 25% of their harvests to our community's needy. I received my first shipment on Wednesday of this week and I couldn't be happier or more excited.




I had big plans for dinner on Wednesday and they didn't necessarily include my 'harvest', but when I received my delivery I was amped! I quickly changed modes and made the fabulous winter vegetable soup recipe that they had provided with my shipment. I was able to use several items from my shipment the very first day. The soup was warm and delicious and best of all....South Beach friendly!


I didn't stop there. NO WAY! Last night's creation is a copy cat recipe of one of my favorite salads ever. It's a marinated black eyed pea salad, the original recipe comes from Dixie Cafe, but alas, I have not been able to locate it anywhere, so here is my take on it.



Marinated black eyed pea salad:
  • 3-4 cups of black eyed peas (canned or cooked)
  • 1 red onion, thinly sliced
  • 2 ribs celery, thinly sliced
  • 1 red pepper, finely chopped
  • 1/2 bunch cilantro, rough chopped
  • 1 turnip, finely chopped
  • 2T garlic chives, finely chopped
  • 1 1/2 cups of your favorite vinaigrette (I used homemade balsamic)
  • Mix all ingredients in a bowl and marinate several hours to overnight. 
  • Add mixture to your favorite blend of lettuce and enjoy!

This salad is delicious, tangy and crunchy. It's star ingredient, the black eyed peas, are perfect for a New Year's resolution. Yes, I used my harvest shipment for this dinner. The three harvest items were red leaf blend of lettuce, garlic chives and a turnip. Oh, and the best part.....it too was South Beach friendly!

My name is Melissa, my friends call me Mel. They have actually been lovingly "on my case" to start a completely different type of blog, but here I am, so enthused and obsessed by the things that are going on in my kitchen that I've decided to start a cooking and baking blog.

My passion is food. Any kind of food that tastes good, really. I love food. For that reason I have struggled with my waistline for as long as I can remember. So, in this blog I'll be journalling my family's journey through our kitchen transformation. On December 6, 2010 we embarked on a journey to create healthier eating habits throughout the household. This is no easy task with two little ones, ages three and four. By the suggestion of my doctor we started the South Beach Diet, but not for the diet only, for the advantages it has on your blood sugar and cardiovascular health.

Oh, did I mention I decorate cakes? Well, I do. I create mostly for the ones I love, but I've sold a few. So, this blog will also include my latest cake creations.
